Setting: I was invited to spend the morning with Sebastian. Starting out in his apartment in Copenhagen for coffee, fried eggs and vegetables. The scene was set for a blue skies conversation around all and nothing, unconstrained and free …conclusion will be labeled TBA for now. From there we took the small journey through the Copenhagen streets, with a short stop at the waterfront, getting a feel of the Copenhagen canal, continuing to his wine-bar ´Lille blå’ at Esplanaden, were I was served a piece of smørrebrød (the danish lunch speciality not to underestimate ;) followed by an assortment of stemware and bottles, getting a taste of his trade.
I left Sebastian past noon, looking forward to our next encounter. A sunny winter day in great company, with bright light and blue skies - my sons birthday on top - only half way through but already a day well spent, it felt.
Who is he: Coming from a background in philosophy and modern literature, ending up building several establishments in the hospitality industry, its obvious that Sebastian is the kind of person who is not afraid of stepping out of the comfort zone and into the unknown - a thinker and a doer, an entrepreneur and no doubt the dedicated and sophisticated kind - swimming against stream, rather than with it, as he himself explained, when I asked to the very aesthetic but rather unconventional way of arranging his books. One can only agree, if you wish to develop and discover, you sometimes need to walk the paths unknown.
